Recipe | Superfood Salad

In case you hadn’t noticed, the weather has upped the game considerably this past week; and it seems that no-one was better prepared for #summer than Dalloway Terrace. This season, Nicki Tibbles Wild at Heart have transformed the restaurant into a kaleidoscopic garden of vibrant wild English flowers, a colourful breath of country air in the heart of central London. Above the tables float oversized bees, a nod to the new Honey Bee themed afternoon tea which has been designed to highlight and celebrate the positive impact that the insect has on our environment. 

What better way to get a little taste of summer than with this recipe for the Dalloway Terrace’s superfood salad? All you need now is a nice G&T, a little space outdoors, and some more sunshine – lovely. 

INGREDIENTS
serves 2

For the salad:

  • 100g Quinoa
  • 2 beetroot
  • 50g feta
  • 50g edamame beans
  • 50g broccoli
  • 5g sunflower seeds
  • 10g mint
  • 10g coriander

For the pomegranate dressing:

  • 10g pomegranate seeds
  • 1tsp pomegranate molasses
  • 1tsp Dijon mustard
  • 1tsp Honey
  • 1tsp red wine vinegar
  • 1tbsp grapeseed oil
