Weekend Recipe | Annie’s Maple Glazed Salmon Fillet

Chiswick and Barnes’ favourite Annie’s share their delicious recipe for Maple Glazed Salmon with new potatoes, sugar snaps peas and honey mustard dressing

Serves 2

For the curing mix

2 salmon fillets

1 tbsp sea salt

½ tbsp sugar

black pepper

juice 1 lemon

maple syrup, to glaze

For the dressing

3 tbsp olive oil

1 tbsp white wine vinegar

1 garlic clove, crushed

3 sprigs of chopped tarragon

1 tsp grain mustard

1tsp honey


Dress the salmon and leave in the fridge to marinate overnight or a few hours. When ready to cook, brush the salmon with maple syrup before gently frying with a little olive oil.

Boil enough new potatoes for two and blanch the sugar snaps keeping them al dente. Toss in a bowl with a handful of baby spinach and a good glug of the honey mustard dressing.

Top with crème fraiche just before serving and a wedge of lemon. Enjoy!
